In addition to its lactate products, Purac America now has available a range of gluconate products. With highly bioavailable mineral gluconates, such as potassium, calcium, zinc and magnesium, Purac offers a variety of fortification solutions for food products. Purac has also introduced its all-natural GDL (glucono-delta-lactone), a slow release acidulant that has a minimal effect on organoleptic properties, according to the company. GDL is used in bakery foods as a chemical leavening aid, in dairy and soy as a controlled coagulator and in salads and dressings to acidify without adding sourness.
In other news, the company has rolled out a new line of calcium called Puracal® XP, in which different lactate/gluconate blends are offered. An example is Puracal Xperform calcium lactate gluconate with very high solubility, high stability and a neutral taste. It is suitable for calcium fortification of syrups and concentrates, for certain processing situations where a fast dissolution rate is required and for stability-sensitive beverage-like carbonated drinks.
