DuPont Nutrition & Health has developed a new FIBERline enzyme complex from the DuPont Danisco ingredient range, so that bakers can respond to market demands for cleaner label products. FIBERline aims to add fiber to whole meal bread, without compromising sensory quality by maintaining volume, softness and freshness similar to traditional white bread, which remains the most popular choice among European consumers. Since some consumers will always prefer white bread, the Dupont Dansico ingredient range has also developed Litesse, a recognized prebiotic dietary fiber that enables a high-fiber claim. Used in combination with a hydrocolloid such as DuPont Danisco’s GRINDSTED CMC, the fiber can be added without impacting the softness, taste and eating qualities of the final white bread.
