Sunrich Food Group, Hope, MN, has recently patented a Light Soy formula, which features a 3:1 protein to fat ratio. The formulation allows for a low fat soymilk, while still maintaining the 6.25 grams of soy protein content needed to meet the FDA approved health claim. Light soy is being used in beverage applications, such as soymilk and with juices and also in cultured soy products, which are similar to yogurt in taste and texture. In addition to liquid form, the formulation can be spray dried into a powder form from which it can be reconstituted.
