Cerestar, Hammond, IN, has completed a new application laboratory at its corporate headquarters. The 6000 square foot application lab enhances Cerestar’s global research capabilities and includes a pilot lab and a full test cooking facility. The pilot lab allows for producing modeling of emulsified sauces, starch jellies, hard candies, soups, sauces, dairy products and frozen dairy desserts and also for encapsulation of flavors and oils.
