Tokyo, Japan-based Kikkoman will construct a new research and development laboratory at University Research Park, a partner of University of Wisconsin-Madison.
The lab, which joins two others in Singapore and the Netherlands, is the company’s first in the U.S., expanding Kikkoman’s global research and development network.
Food science researchers from Kikkoman and UW-Madison will explore how flavor, functionality and fortification of the company’s food products can create healthier foods with greater benefits to consumers, according to Yuzaburo Mogi, Kikkoman chairman and CEO.
“The United States is Kikkoman’s most important international market,” he said at a press conference. “We expect to develop exciting new products.”
Mr. Mogi said the lab will bring together Kikkoman’s tradition of producing naturally brewed soy sauce with UW-Madison’s reputation as a leading institution for cutting-edge food science research.
Kikkoman has long had roots in Wisconsin. The company’s production facility in Walworth, which in June celebrated its 35th anniversary, was its first outside of Japan and the first Japanese-owned manufacturing facility in the state and the country.
