ADM Releases 2025 Flavor and Color Trends Report

This year’s theme is the rediscovery of the self, and creating human experiences in a world increasingly dominated by technology.

ADM has released its report detailing the trending flavors and colors set to impact food and beverage innovation in the next year.
 
“With the world increasingly dominated by technology, 2025 will be a year of embracing the ‘new human nature’ through a recognition of innate human qualities,” ADM said. “This ‘rediscovery’ of the self will influence which flavors and colors resonate the most with consumers as we explore emerging facets of the human experience.”
 
ADM identified four trends in particular that will shape food and beverage development, reflecting increased consumer demand for wellness, affordability, and personalization. The four trends are Revisit & Reinvent, Adaptive Eating, Euphoric Wellness, and Made for You.
 
Revisit & Reinvent
 
This trend captures memories and shared experiences, and new generations experiencing classic tastes and colors for the first time. This is leading to the reinvention of tradition through simplicity, familiarity, and comfort.
 
Color inspirations for this trend include coral red, fruit punch, and regal burgundy, while flavor inspirations include elevated berry, creamy, umami-rich flavors, indulgent sweet brown profiles, and regional-favorite fruits.
 
Adaptive Eating
 
Consumers are adapting their consumption to support their well-being, adapt to economic and environmental concerns, and to fulfill other human needs for satisfaction from foods and beverages.
 
Color inspirations include golden maize, ripe apricot, and terracotta, and flavor inspirations include orange, lime, apple, honey, creamy flavors, cheese/dairy, indulgent flavor types, and flavor technology to achieve unchanged taste in better-for-you formulations.
 
Euphoric Wellness
 
“Flavors and colors are interconnected with human foods and emotions, and there will be an ongoing desire for options that represent different areas of wellness, including nourishment for the mind, body, and soul,” ADM reported.
 
Color inspirations include honeydew melon, sweet sage, and earthy olive, and flavor inspirations include hops, grapefruit, bergamot, tropicals, and botanicals.
 
Made for You
 
This trend captures how unexpected and personalized foods and beverages with vibrant flavors and colors can spark curiosity and create meaningful moments.
 
Color inspirations include summer blue, blue spruce, and Neptune’s reach, and flavor inspirations include playful concepts, cooling, heating, mouthfeel, and highbrow/lowbrow flavor concepts.
