A new line of High Protein Crispy Bits has been launched by Zumbro River Brand, Inc. Produced by twin screw extrusion of selected blends of high protein ingredients, the Crispy Bits are available in several sizes. Crunchy, nutty-flavored Crispy Soy Bits are offered with 50-80% protein content. In addition to protein, the 50% and 60% protein Crispy Soy Bits have a high soy fiber content. These bits also offer significant levels of soy isoflavones, potassium and oligosaccharides. With their high protein level, the Crispy Soy Bits can help formulators reach the soy protein level required to make the heart health claim. In other developments, the company has introduced Crispy Dairy Bits with 50-70% protein, utilizing whey protein concentrate and/or whey protein isolate. These patented products have a bland flavor and a softer crunch than Crispy Soy Bits. Crispy Bits with combinations of soy and dairy protein are also offered and Unique Customized Crispy Bits can be produced, which include other beneficial ingredients such as oat flour with beta-glucan, brown rice with rice bran, hydrolyzed guar gum or citrus fiber. In addition, nutraceutical ingredients like gelatin, glucosamine, chondroitin sulfate, whey peptides or probiotics can be included or enrobed on the surface.
