A&B Ingredients has introduced Swelite, a multifunctional, non-genetically modified (GMO) pea ingredient containing both dietary fiber and starch. Particularly suited for meats, poultry, fish and vegetarian products, as well as sauces and dressings, Swelite has a natural origin and is produced by a natural process. Derived from yellow peas without the use of organic solvents, Swelite provides water-binding properties. It is able to bind 10 parts of water by capillary uptake in cold conditions. Additionally, gelatinization of the liked starch granules provides a supplementary buffer to the water binding capacity.
