SPINS, Schaumburg, IL, and Soyatech, Bar Harbor, ME, have released a study indicating the U.S. soy market continues to evolve and grow. After years of rapid growth, the U.S. soy foods market, valued at more than $4 billion in 2007, is now beginning to show signs of maturity, the report suggests. While growth in some of the larger categories seems to be coming to a halt, other emerging subcategories are beginning to develop.
