Mars is one of several food companies collaborating on a new research project designed to provide more information about phytonutrients, which are beneficial compounds found in a range of products, including chocolate. The U.S. Agricultural Research Service (ARS) has launched a database on the Internet for phytonutrients known as ‘proanthocyanidins—a subclass of flavonoids—in 2006 selected foods…Scientists with ARS’ Beltsville Human Nutrition Research Center released the food composition resource last month. Collaborators include scientists at the ARS-funded Arkansas Children’s Nutrition Center (ACNC), Mars and cranberry supplier Ocean Spray Cranberries.
