Armand Products Company, Princeton, NJ, producer of potassium bicarbonate, has released extensive primary and secondary research showing potassium fortification can provide an opportunity to food and beverage manufacturers looking to attract consumers. The research demonstrates that consumers respond very positively to potassium claims, with response comparable to calcium and vitamins. A white paper titled “An Overview of Potassium Food Fortification using Potassium Bicarbonate” reviews the various health, structure/function and nutrient claims associated with potassium, conditions that must be met to make those claims and the results of consumer testing of the claims. The use of potassium bicarbonate to deliver potassium to foods is outlined, covering economics, compatibility with other ingredients and data on taste and sweetness enhancing behaviors.
