“A team of scientists has developed a tomato that contains as much as three and a half times more of the cancer fighting antioxidant lycopene. It turns out that the antioxidant rich tomato was a happy accident. Scientists at Purdue University and the U.S. Department of Agriculture’s (USDA) Research Service were working to develop tomatoes for food processing that were of higher quality and would ripen later. They accomplished that, but in the process they discovered that the new tomatoes also had significantly more of the antioxidant [lycopene] than conventional tomatoes…A U.S. patent application has been filed on behalf of the joint owners, USDA and Purdue Research Foundation.”

Lastly, it noted, “Because you probably don’t have time to grill fish every night, consider supplementing your diet with fish oil capsules.” The Arthritis Foundation based its recommendation on clinical studies reporting that omega 3’s provide joint health benefits for rheumatoid arthritis patients.
