A recent study has confirmed that natural antioxidants from Kalsec, Kalamazoo, MI, provided a 79% reduction in the formation of hexanal, a marker for oxidation in foods, in extruded cereal containing 5% milled flax seed. Reducing the development of oxidation results in significantly improved shelf life for extruded cereals, as well as preventing off-flavors such as rancid or cardboard-like notes. Kalsechas developed antioxidants in a full range of oxidation management solutions to improve the stability of flavor-sensitive food products.
