Bartek Ingredients will showcase Pecmate, a new proprietary technology designed to optimize pectin-based gummy formulation, at Food Ingredients Europe in Frankfurt, Germany, a hybrid event slated to take place at the end of November. Along with discussing its decades of experience in producing malic and fumaric acid, Bartek will discuss the formulation capacities of Pecmate Pectin Enhancer, which is ideal for gummy and soft candy formulation.

The ingredient can help formulators overcome production challenges such as gelling behavior and maintaining stable pH throughout the formulation process, Bartek said, noting that this means less product loss, less production downtime, and more optimal buffering than other commonly-used buffer systems such as sodium citrate.
“Pectin requires a delicate balance of pH to set properly and produce a stable piece of candy,” the company reports. “The slightest error in pH can lead to disposal of an entire batch.” This is because, unlike the highly-stable gelatin, Pectin has a very narrow ideal pH range and changes in sodium citrate can cause significant variations in batch consistency.
The new ingredient is also formulated to provide better gummy and soft candy consistency, clean release from molds, and candies which hold their shape, all with lower production costs, and on-trend confectionary and VMS delivery platforms that appeal to the current consumer base, Bartek reports.
Bartek will be showcasing the new ingredient at both portions of the event, including the online portion which starts today, November 22, as well as the in-person portion which begins on November 30, with both portions running until December 2.
