Tokyo, Japan-based Kikkoman will construct a new research and development laboratory at University Research Park, a partner of University of Wisconsin-Madison. The lab, which joins two others in Singapore and the Netherlands, is the company’s first in the U.S., expanding Kikkoman’s global research and development network. Food science researchers from Kikkoman and UW-Madison will explore how flavor, functionality and fortification of the company’s food products can create healthier foods with greater benefits to consumers, according to Yuzaburo Mogi, Kikkoman chairman and CEO.
