Bioinformatics Tool Helps Chr. Hansen Improve Human Health; Unveils New Product Concepts
Chr. Hansen, Hørsholm, Denmark, has obtained a license to use the proprietary ERGO database and genomic discovery system developed by Integrated Genomics, Inc., Chicago, IL. Scientists at Chr. Hansen’s Genomics & Strain Development will use the ERGO system to characterize and develop lactic acid bacteria used in foods and as probiotics for human health. Optimized for analysis of microorganisms, ERGO integrates biological data from genomics, biochemistry, gene expression studies, genetics and literature. It combines pattern-based analysis with comparative genomics and enables visualization of genes in the context of regulation, gene expression data, phylogeny, chromosomal neighborhoods and identification of natural gene fusions.
Chr. Hansen has also unveiled a new portfolio of product concepts and natural ingredients for health and wellness. For example, the company has developed anthocyanins that provide unique, natural shades of red color that are heat, light and acid stable. The company is also highlighting dairy flavors that are made from real cheese, cream and milk. In addition, Chr. Hansen has designed a line of vegetarian-based savory flavors. Lastly, Chr. Hansen is offering rosemary extract as a natural antioxidant that allows for all-natural labeling, as well as a range of NOP-compliant ingredients for organic applications.
