New Era Nutrition, Edmonton, Alberta, Canada, has filed a U.S. patent application through a related company based on the textural and nutritional ingenuity of its FruitSponge technology. Through preliminary research conducted at New Era’s Edmonton-based facility, the corporation’s food scientists found that existing fruit-based bars are typically dense and sticky, and are very high in sugar content with low nutritional value. New Era’s invention provides for a low density, spongy fruit bar using low moisture fruit to provide fiber, and supplements the nutrient base with whey protein.
